Easy Monster Cookies

When the sugar craving hits and the cookie monsters of your family ask for something yummy to eat, here is a great, easy recipe to have on hand. These Easy Monster Cookies only call for a handful of ingredients and a few minutes of your time to bake.

Below I also have a recipe card image you can print off and add to your collection. I originally made this recipe card for a recipe swap with pen pals on Swap-Bot.com.

Easy Monster Cookies Ingredients:

1 box of cake mix

2 large eggs

1/4 cup vegetable oil

green food coloring

1 pack royal icing eye candies

Baking Instructions:

Preheat oven to 350 F

Mix together cake mix, eggs, and oil.

Add food coloring until you’re happy with the intensity. This will vary depending on what type of food coloring you use.

Roll cookies into golf-ball size balls and put on a greased baking sheet.

Bake 7-9 minutes or until edges are brown.

Decorate cookies with eye candies while they are still warm.

Serve your monster cookies to your own cookie monsters.

Additional Kitchen Witch Notes

Use any cake mix you like, however, the white cake mix allows for the addition of wacky food coloring. I like Funfetti cake mix for its already added sprinkles. Feel free to add your own sprinkles or other yummies like chocolate chips.

You can find the googly monster eyes in the cake decoration section of your super store or craft supply store. If you’re feeling really crafty, make your own with royal icing and let harden before adding to warm cookies straight from the oven.

Fun thing about these cookies that also makes them easy is if they meld together in the baking, that’s just fine! They’re monsters and are supposed to look a little crazy.

These cookies are my husband’s favorites. Its not uncommon for him to get off work and grab a box of cake mix on his way home for me to mix up.
